Chia pudding is a great breakfast to kick start your day. Chia seeds contains a high amount of healthy omega-3 fatty acids, fiber, protein and other goodies. You can simply sprinkle them on your oatmeal, smoothie, salad or make a chia pudding. Chia pudding is extremely easy to prepare. The taste of the pudding is versatile depending on the liquid you soak the seeds in. My favorites are with coconut water, soy milk, milk, almond milk, oh! I soaked them in bubble tea once, it was delicious.
To make chia pudding, you will need:
- 3 tbsp chia seeds
- 1 cup coconut water (or other liquid of your choice)
- 1 tsp honey (or maple syrup, optional)
Put the ingredients in a bowl. Stir them after 10 minutes to loosen up the seeds and the liquid. Soak the seeds for at least 2 hours. I usually put them in my fridge before I go to bed.
For toppings I like fresh berries for the sweet and tartness; nuts for the crunchiness; and a drizzle of honey. You can get really creative with the toppings! In the picture below, I first layer the jar with figs, then some chia pudding soaked in coconut water, dried coconut flakes, more chia pudding, and lastly, almonds, blueberries and honey. Dig in and enjoy!
