Vanilla rice pudding

This vegan rice pudding recipe requires only 3 ingredients and is bound to give you an amazing morning.

Boil 1 cup rice, 2 cup soy milk and 1 teaspoon vanilla sugar until bubbles are formed. Simmer for 10 minutes. Top with fresh blueberries, mint leaves and honey.

Vanilla sugar gives the pudding a tint of sweetness. When it is cooked, the smell of vanilla is enhanced. Berry toppings are cold, tart, fruity and watery. They make a good contrast with the heartwarming rice pudding. Mint leaves add that extra refreshment. If you like the pudding to be sweeter, add honey to taste.
